The nickname for my daughter Harriet, Miss Harry Chardonnay comes from one of the highest and coolest slopes in the Adelaide Hills, which is regarded amongst Australia’s best regions for this variety. This climate provides the conditions for flavour development while retaining natural acidity. Vinification occurs at cool temperatures and gravity settled. The wine sees a hint of barrel fermentation for extra complexity while still allowing the fruit to shine. No preservatives are added at all in the vineyard nor the wine making process and only the minimum at bottling to ensure a safe and long future – Dean Hewitson
